NUTTY CAROB FUDGE BALL

GLUTEN- FREE, DAIRY- FREE, REFINE SUGAR FREE


When I was a child chocolate on ice cream was a very important treat for me. Today I don’t have dairy chocolate anymore but I have this recipe that brought wonderful memories of my childhood thanks to a wonderful lady- Mrs. Sally Kelly. 



2 cups brazil nuts

½ cup sesame tahini

½ cup honey or 1/3 cup of agave

1/3 cup carob powder (Chatfield’s is good)

½ tsp salt

1 tsp vanilla

1 tsp maple flavoring


 1. Blend brazil nuts in food processor until ground well.

2. Empty ground nut into bowl and add other ingredients

3. Mix together well and roll into a 1/8 cup balls.

4. Place on a cookie sheet and freeze for 30 minutes to an hour

5. Thaw a few minutes before serving. Keep remainder frozen until ready to eat.
